Tortilla Chili

Sixty degree weather doesn't usually call for chili, but today I was in the mood for comfort food. My mother had posted a chili recipe on my Facebook page the other day (yes, my mom has Facebook and we are friends!) and it looked like a great recipe to try. A One-Pot One-der, all you need is a crock-pot (and some time)! Prep for this is super easy and quick, and the outcome will make your company think you spent hours in the kitchen! I added a few extra ingredients, but use what you have.




2 Chicken Breasts
2 cans of diced tomatoes (or 6 roma or 3 beefsteak tomatoes and 1 small can of tomato paste)
1 can Black Beans Drained
1 can Kidney Beans Drained
1 can of Pinto Beans Drained
1 can of Corn (or 2 cups of corn)
1 Onion chopped
2 cans of Chicken Broth (or 2-3 cups of chicken broth)
1 Tablespoon of Garlic
1 Tablespoon of Chile Powder
1 Tablespoon of Cumin
A Handful of Cilantro chopped

Take all the ingredients except for the chicken and add them into the crock-pot. Place the chicken on top. The ingredients can cover the chicken. Cook 6-7 hours on High, or 8-9 hours on Low. Before serving, pull the chicken out, shred using two forks, add it back in and stir. Serve with a sprinkling of cheese, a dollop of greek yogurt and a biscuit. Happy Cooking! Enjoy!
